Today I’m linking up with my girls Shay and Sheaffer for another round of “What’s Up Wednesday”! These sweet gals started WUW, a little link up party where we all share what’s going on in our crazy lives right now. We talk about food, family, what we’re wearing, what we’re doing, what we’re watching and a little bit of everything else all in one post! It’s been a long time since I’ve shared, so let’s dive in!!
WHAT WE’RE EATING THIS WEEK: Anyone else feel like summer is crazy?! It’s hot, I don’t want to cook and most of the time I’d rather be outside playing! But, I guess we all gotta eat so here are a few things I’ve made recently or am making this week.
- Chicken Osaka: this yummy dish is made famous by Noodle Express and I grew up eating it all the time in Spokane. It’s amazing and this recipe is so dang close to the original. Give it a try, you won’t be disappointed!
- Copycat Cava Bowls: I freaking love Lillie Eats and Tells…she never lets me down and her copycat Cava bowls are so on point! Also, if you’ve never had Cava…you have to!
- Berry Fruit Salad: Totally making this for our 4th of July BBQ!
- BLT Caprese Stackers: Ok, but how amazing and easy do these stackers look? Another great idea for a 4th of July BBQ.
WHAT I’M REMINISCING ABOUT: My sister and I went to the Backstreet Boys concert a couple weeks ago and it was EPIC!! Y’all…they still got it…almost 30 years later they. still. got. it. It was such an amazing night and we sang our hearts out! Where my fellow 90s babies at?!
WHAT I’M LOVING: Summer. Summer. Summer. I know a lot of people complain about Texas summers, but I love it! Pool days, splash pads, the beach, the lake. All the things. Bryn has been obsessed with the water this summer and is so fearless.

WHAT WE’VE BEEN UP TO: We went to St George at the end of last month to visit family and had the best time! We were only there for a few days, but were able to pack in a ton of fun!

WHAT I’M DREADING: A 15 hour drive to Utah with my two year old…send help! She does decent in the car, it’s just a difficult age because she doesn’t want to be contained for long periods of time. If any of you have travel tips, advice, activity ideas…please send them my way!
WHAT I’M WORKING ON: So for Father’s Day I got Shawn a full set of dumbbells for our home gym. I originally bought a rack on Amazon to go with them, but didn’t love it and it was too small. So surprise surprise, we’re going to build our own. Stay tuned for plans and design inspo!
WHAT I’M EXCITED ABOUT: We celebrated Bryn’s 2nd birthday! I seriously can’t believe she’s already two…what?! It’s been so fun watching her little personality develop. And lately she’s been loving dolls so I decided to design her a big dollhouse and enlist Shawn to help me build it. Guys, it turned out so cute and Bryn’s obsessed with it! It was a challenging project, but I feel like those are the best ones. I love it! Still a lot to do on it, but here are some photos!

WHAT I’M WATCHING/READING: I’ve been in such an HGTV kick lately! Particularly, I’ve been loving “No Demo Reno” and “Windy City Rehab”. I’m blown away by peoples’ skills…and if I’m being honest, a bit jealous! That would be my dream job!

WHAT I’M LISTENING TO: Y’all, I have been in such a book rut lately! I have my 2022 Book List, but I have not been impressed by really anything on it. Yikes! I did like the first Shadow and Bone book, so now I’m deviating from my list and reading the second book in that series. It’s a little slow, but I think I’m just going through a book funk right now. I’d gladly take any book recommendations y’all may have!

WHAT I’M WEARING: Swimsuits all day every day. But for real….this Texas heat is unreal! I’ve been loving this super comfortable, effortless swimsuit from Target.
WHAT I’M DOING THIS WEEKEND: It’s 4th of July weekend and we have some fun plans! Friday night, Shawn and I are going out on a date and have a reservation at The Melting Pot!! I’ve been wanting to try this place for a really long time, so I’m super excited! Saturday we’re babysitting our nieces and nephews so we’ll probably all hit the pool together. Bryn LOVES cousin time! Saturday night we are going to a huge Independence Day event that our town puts on at a local park and it should be lots of fun! Then on Monday we are going with a group of family and friends to see the new Minions movie with all the kids and then BBQing and watching fireworks that night! What are y’all’s plans for the 4th?
WHAT I’M LOOKING FORWARD TO NEXT MONTH: Shawn’s entire family (even extended family) are surprising his grandpa for his 90th birthday! We are all going to little Monticello, Utah to celebrate with him and it’s going to be a blast. We’re also going to sneak in some hiking at Mesa Verde and I’ve always wanted to go there!
WHAT ELSE IS NEW: Not much!
